Simple Roasted Cherry Tomato Pasta

While this may be a simple recipe, it is still full of amazing fresh flavor! The cherry tomatoes, garlic, and garnish of basil really make this dish come to life. Majority of the ingredients are probabaly in your kitchen right now! Even better, right? This is a great regular line-up recipe that's also easy on the wallet and delicious for the taste buds.



Simple Roasted Cherry Tomato Pasta

(serves 3- 4)

8 oz of spaghetti

10 oz cherry tomatoes, whole

4 cloves of garlic, minced

3 tbs olive oil

1 tsp balsamic vinegar

1/2 tsp Italian seasoning

1/2 tsp sea salt

1/4 tsp black pepper

1 tsp pure maple syrup

small can of sliced black olives (2.25 oz)

red pepper flakes (to taste/ optional)


Directions:

Preheat oven to 390 degrees. Cook pasta according to package directions.


In a medium casserole dish, add cherry tomatoes, garlic, olive oil, balsamic vinegar, italian seasoning, sea salt, black pepper, and maple syrup. Toss to combine seasonings and coat tomoatoes well with oil. Cook for 20 minutes, stirring halfway during cooking.


Add cooked & drained spaghetti pasta to the cherry tomatoes casserole dish along with sliced olives. Toss to coat pasta really well. Add red pepper flakes if you'd like added heat. I typically let individuals add it to their own personal dish. Serve immediately with recommended garnishes for an even more well-rounded flavor.


Recommended garnishes: fresh basil & vegan parmesan
