Dessert Sushi

I have loved sushi since the first time I tried it in my early 20s. It's one of those things people either love or hate. There doesn't seem to be a middle ground. But this sushi roll is fun, creative, & a sweet treat bound to please the crowd- especially your younger crowd. You can make it for breakfast, a snack or even an after-dinner dessert. Use a fork or chopsticks because it will be a little sticky!



Dessert Sushi

(serves 3-4)

3 bananas

3 tortillas

Natural Peanut Butter (recommend Adam's Natural Creamy PB)

Coconut Flakes (unsweetened)

Raw Honey or Maple Syrup

Cinnamon


Additional topping options: chocolate chips, sprinkles, or brown sugar


Directions:


Lay tortillas out flat. Spread peanut butter on the entire tortilla. Sprinkle lightly with coconut flakes on entire tortilla. Drizzle a little maple syrup or raw honey on top of peanut butter and coconut flakes. Repeat for each tortilla.


Peel and then cut the ends off the bananas. Place one banana on one end of the tortilla and tightly roll it up. It will stick bc of the peanut butter. Repeat for each banana and tortilla.


Warm up each roll in a pan on medium heat and place roll seam side down to seal it. I roll it to each side and toast about 2 minutes per side. You just want it lightly golden brown.


Plate it and add warm raw honey or maple syrup (vegan option) on top then sprinkle with cinnamon & coconut flakes! Carefully, cut into "sushi" rolls with sharp knife & serve!
